New beers launched by craft brewery with a taste for foraging its ingredients

Mendip craft brewery Yonder Brewing & Blending has launched two limited edition seasonal beers as it continues to expand.

Flying Wonder and Who is Nellie? – as with the rest of its range – use locally foraged ingredients, showcasing the variety of flavours available on its doorstep while also eliminating food miles. 

The farmhouse brewery, based near Binegar, was founded two years ago by Jasper Tupman and Stuart Winstone, who formerly worked at the Wild Beer Company, based near Shepton Mallet.

The pair, who share a passion for foraging, fermentation and flavour, invested everything they had to build their unique vision of carefully crafted beers with a strong sense of place. They were joined in 2019 by former Dawkins of Bristol head brewer Dave Williams. Ex-Cotswold Brew Co sales director Lee Calnan joined them in a similar role.

Last year marked a further phase of development when it started to expand its innovative, modern farmhouse brewing to a wider audience in the UK and beyond.

Stuart Winstone said: “We are delighted to be launching our two new limited-edition beers, both of which use locally foraged ingredients from close to our modern farmhouse Somerset brewery.”

He said both beers represented Yonder’s approach to brewing – celebrating local flavours and experimenting with amazing yeasts and microflora, while producing perfectly balanced and moreish beer.

“By brewing with the very best of local ingredients and alternative techniques that combine historic styles and modern brewing technology, our approach to mixed fermentation and barrel ageing puts the emphasis on balance of flavour and drinkability,” he added. 

“Minimal intervention is the key to ensuring that there’s a little bit of nature in every sip.”

Flying Wonder – which has an abv of 4.9% – is described as a saison-style beer brewed with foraged sea buckthorn berries from the coast at Weston-super-Mare,

The name was inspired by Pegasus, the white-winged horse of Greek mythology that would graze on sea buckthorn berries. It was these bright, tart little fruits that enabled him to fly around ancient Greece and Mount Olympus.  

Who is Nellie? (7% abv) is a triple-fruited melba sour beer brewed from apricot, peach, raspberry and vanilla. Peachy orange in colour, vegan and lactose-free, it is named after Australian opera singer Nellie Melba, who inspired the peach melba dessert. 

Yonder’s core range of beer is available in 440ml cans and includes its flagship Raspberry Gose, an extremely popular sour fruited beer with an abv of 6% abv, Acapella, a heavyweight pilsner with an abv of 5.5%, Sub Culture, a 4.5% abv mixed fermentation dry-hopped pale ale, Coolbox, a 3.5% abv session helles beer, and Boogie, a 3.8% abv modern bitter.
